Miso is traditionally served at Sushi restaurants, but most of the time it's rather sparse. This is the big boy version, and while I didn't do that, it's normally served over steamed rice...

Wishing you all a wonderful meals, music, and many inspiring encounters over breakfast, brunch, lunch, tea/coffee, dinner, or any other opportunity to feed your stomach and your creative spirit!
Have been taking a short break to regroup a bit, but I am looking forward to this year and to watching jazzcookbook develop and grow.

Cilantro is an herb used in many recipes all year long. But summer has a special place for the fragrant herb, as it complements everything from chilled summer salads to spicing up meats and soups to exotic desserts like cilantro ice cream! And you thought bruschette was a veggie thing! According to Lidia's Italian Table, bruschette translates to "little burnt ones", because the edges become burnt when the bread is grilled. Her book goes on to say that aside from rubbing garlic and oil on the toast, other toppings like vegetables, fish or beans and meat are limited only by ones imagination. Dare I suggest a fresh summer fruit saute on grilled fruit bread? Read on....

Just realized I need a veggie category. With all the lovely veggies we get every week from L.O.V.E., I should have something (especially considering the need for balance with a meat, meat, meat category).
Kari made this souffle last night. It was a spontaneous idea and turned out quite lovely...

This is an adaptation of a fine Mexican recipe from the book,Food From My Heart by Zarela Martinez. Of course, I used the basic formula for the recipe, but jazzed it up by changing and adding a few things as I went along. Of course, I tossed in a little tequila to hit a high note of flavor!

Risotto is something so delightful, and so easy to make. Key is the rice. Arborio rice is pretty much it. Best grain for it. Once you got the basic recipe, you can experiment with all kinds of flavors. Anything goes! A few days ago I made Risotto with Zucchini cubes. Was lovely. But this topped it by far. Carrot risotto might sound odd, I don't know how I thought about this apart from the fact that I had carrots in the fridge that needed to be used, as well as a ripe mango....
Note: Fried up squares of the risotto in butter on fairly high heat the next day as a side dish. Got the outside nice and crunchy... yum ;-)
